Vegan Thai Green Curry with Crispy Baked Tofu
Easy Vegan Thai Green Curry Recipe
3 cloves garlic, minced
1 small red onion, sliced
1 medium red bell pepper, sliced
1 head broccoli / approximately 3 C chopped
1 C canned coconut cream (ethically sourced)
1 C water + 2 T
1.5 T soy sauce
1.5 T silan (substitute option: maple syrup or sugar)
Fresh lime juice
Heat 2 T water to a sauce pan over medium heat.
Add garlic and onions. Sauté until onions are translucent.
Add green curry paste. Cook for 2 minutes stirring constantly.
Add broccoli, red bell pepper, water, coconut cream, soy sauce, and silan. Cover and simmer for 7-8 minutes. Adjust any flavors if necessary. Remove from heat.
Serve with tofu, cilantro, and lime juice.
