Vegan Thai Green Curry with Crispy Baked Tofu

Easy Vegan Thai Green Curry Recipe

Ingredients

  • 3 cloves garlic, minced

  • 1 small red onion, sliced

  • 1 medium red bell pepper, sliced

  • 1 head broccoli / approximately 3 C chopped

  • 1 C canned coconut cream (ethically sourced)

  • 1 C water + 2 T

  • 1.5 T soy sauce

  • 2 T vegan green curry paste

  • 1.5 T silan (substitute option: maple syrup or sugar)

  • Crispy baked tofu

  • Serve with:

    • Cilantro

    • Fresh lime juice

Method

  1. Heat 2 T water to a sauce pan over medium heat.

  2. Add garlic and onions. Sauté until onions are translucent.

  3. Add green curry paste. Cook for 2 minutes stirring constantly.

  4. Add broccoli, red bell pepper, water, coconut cream, soy sauce, and silan. Cover and simmer for 7-8 minutes. Adjust any flavors if necessary. Remove from heat.

  5. Serve with tofu, cilantro, and lime juice.
