Veggie "Palette" Bowl

my meals tend to look like this On the days I crave simple, fresh food; raw veggies — cut in a way that inspires me — sliced avocado, greens and beans topped with a nice dressing or fresh lemon juice. Use this recipe as a guideline Or follow it exactly; remember to use your favorite veggies.

Carrots, cucumber, red pepper, raw beet, red cabbage, kohlrabi, avocado, lettuce, chickpeas, basil, and romaine lettuce in a bowl.

Ingredients

  • 1/4 avocado

  • 1/2 can chickpeas

  • 1 C romaine lettuce

  • Small handful of fresh basil or other fresh herb.

  • 1/2 fresh lemon (or a dressing or sauce of choice)

  • Pinch of salt

  • Raw veggies I used:

    • Red pepper

    • Kohlrabi

    • Cucumber

    • Carrot

    • Raw beet

    • Red cabbage

Method

  1. Wash and cut your vegetables as desired.

  2. Place your fresh greens and herbs in the bottom of your bowl. Top with vegetables, chickpeas. Sprinkle with dressing or lemon juice.
