Veggie "Palette" Bowl
my meals tend to look like this On the days I crave simple, fresh food; raw veggies — cut in a way that inspires me — sliced avocado, greens and beans topped with a nice dressing or fresh lemon juice. Use this recipe as a guideline Or follow it exactly; remember to use your favorite veggies.
1/2 can chickpeas
1 C romaine lettuce
Small handful of fresh basil or other fresh herb.
1/2 fresh lemon (or a dressing or sauce of choice)
Pinch of salt
Raw veggies I used:
Wash and cut your vegetables as desired.
Place your fresh greens and herbs in the bottom of your bowl. Top with vegetables, chickpeas. Sprinkle with dressing or lemon juice.
