Roasted Pear with Ginger Orange Cream

A deliciously decadent yet super nutritious dessert. The base of the ginger orange cream is made of cashews and sweetened with dates. I hope you enjoy this one as much as I did!


Ingredients

  • 2 ripe pears

  • ½ C cashew soaked in water for 4 hours

  • 1 tsp vanilla extract

  • 1 tsp tahini

  • 1 tsp fresh orange slice

  • ⅛ tsp orange zest

  • ¼ water + 2 T if needed

  • ½ tsp maple syrup

  • 2 medjool dates pitted and chopped

  • 1 tsp fresh orange juice + a little more to brush over pears

  • 2 T fresh grated ginger

  • Pinch salt


Method

  1. Preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper. Set aside

  2. Cut the pears in half. With a spoon, form a small bowl in the center of the pear by scooping out the seeds and a little extra flesh around the center. Brush pears with fresh orange juice. Place face down on the parchment paper lined baking pan. Bake for 10-15 minutes or until pears are tender.

  3. In a high-speed blender, combine cashews, vanilla, tahini, orange slice, orange zest, orange juice, dates, maple syrup, ginger, salt until very creamy.

    Spoon blended cream into the center of the pears. Top with fresh fruit. May be enjoyed warm or chilled. Lightly spread the ginger orange cream over plate to serve.
