Ramen Inspired Soup with Black Bean Noodles
A delicious ramen inspired noodle soup with crunchy vegetables. A fresh and light recipe that will leave you satisfied and energized.
Noodles & Veggies:
1/2 package black bean noodles
1 C broccoli florets, chopped
1 red bell pepper, slice or chopped (your choice!)
4 large Bella mushrooms sliced
2 T minced fresh ginger
1 tsp ground black pepper
Soy sauce to desired taste — this will be a major source of flavor, so be generous.
1/2 medium onion, minced
2 tsp garlic powder
3 C water
Cook black bean noodles per box instructions.
Saute ginger, onion, and 2 T water until onions are translucent.
Add remaining broth ingredients. Bring to a boil. Reduce heat and simmer for 5-10 minutes.
Remove from heat.
Place all vegetables in broth. The goal is to wilt the veg lightly but still maintain a raw couch.
Arrange noodles in a bowl. Pour broth and vegetables over noodles.
Serve with avocado, cilantro, or any toppings of your choice.
