No Recipe Soup Recipe

This is not a recipe. This is merely a starting point, a sketch or a guideline to inspire and empower you to make your own delicious vegetable soup. The beauty of this “no recipe soup recipe” is that you don’t need to follow it exactly. Experiment until it tastes great! This could also work really well in a slow cooker or Instant Pot.

Suggested Ingredients

Vegetables

  • Potato

  • Carrot

  • Zucchini

  • Broccoli

  • Sweet Potato

  • Cauliflower

  • Red Bell Pepper

Beans or Legumes

  • Dry lentils

  • Canned or pre-cooked beans of choice

Spices and flavor

  • Oregano, a lot

  • Ginger root, freshly minced

  • Turmeric, just a pinch

  • Curry powder, a small spoonful

  • Black pepper

  • Tarragon, a small spoonful

  • Sweet paprika

  • Salt or Soy Sauce to taste

Serve With

  • A whole grain such as brown rice or quinoa.

  • Freshly squeezed lemon juice.

  • Fresh cilantro or parsley

  • Hot sauce

Method

  1. Cut your vegetables as desired. Place them in a large pot. Add the dry lentils if using. Add water until there are at least 3 inches of water above the vegetables.

  2. Bring to a boil. Add spices. Cover and let simmer until lentils and potatoes are tender and thoroughly cooked or after 20-30 minutes.

  3. Serve over whole grains with fresh lemon juice, fresh herbs, and hot sauce.

When I’m looking to add more greens to my soup, I will start with a bowl of raw chopped mixed greens (usually kale, spinach, parsley, and cilantro), pour the hot soup over the top, and let the heat gently wilt my greens. Voila a delicious, greens filled soup.  ©Elena Hollenhorst
