No Recipe Soup Recipe
This is not a recipe. This is merely a starting point, a sketch or a guideline to inspire and empower you to make your own delicious vegetable soup. The beauty of this “no recipe soup recipe” is that you don’t need to follow it exactly. Experiment until it tastes great! This could also work really well in a slow cooker or Instant Pot.
Red Bell Pepper
Beans or Legumes
Canned or pre-cooked beans of choice
Spices and flavor
Oregano, a lot
Ginger root, freshly minced
Turmeric, just a pinch
Curry powder, a small spoonful
Tarragon, a small spoonful
Salt or Soy Sauce to taste
A whole grain such as brown rice or quinoa.
Freshly squeezed lemon juice.
Fresh cilantro or parsley
Cut your vegetables as desired. Place them in a large pot. Add the dry lentils if using. Add water until there are at least 3 inches of water above the vegetables.
Bring to a boil. Add spices. Cover and let simmer until lentils and potatoes are tender and thoroughly cooked or after 20-30 minutes.
Serve over whole grains with fresh lemon juice, fresh herbs, and hot sauce.
