Classic oatmeal with a holiday twist intended to give you lasting energy for all of your December adventures.
For the Oats:
2 C rolled oats
3.5 C water
1/2 C plant milk (I used almond milk)
1-2 T ground cinnamon (This depends on how much you like cinnamon!)
2 T ground flax
1 T maple syrup
For the Toppings:
1 apple, sliced
3/4 C pomegranate seeds
2 T tahini
10 frozen raspberries
2 T pumpkin seeds
2 T Dried cranberries
4-6 Fresh mint leaves
A couple walnuts
In a medium pot, bring water to a boil.
Add rolled oats. Reduce heat to medium-low and simmer until the liquid is absorbed. Stir periodically. (5-7 minutes.)
Remove from heat. Add plant milk, flax, cinnamon, and maple syrup. Mix well.
Transfer porridge into two bowls and divide the toppings evenly.
