Hemp Oatmeal Pancakes
Nourishing pancakes for any occasion! If you don’t have access to hemp seeds, scroll down to the bottom of this post to see your alternatives.
1 T shelled hemp seeds*
1/2 C water*
2 ripe bananas
3/4 C rolled oats (gluten free if needed)
1 tsp baking powder
1/4 tsp vanilla extract
In a high-speed blender, add hemp seeds and water. Blend until smooth. Set aside. (You can strain the milk through a cheese cloth if desired, but it’s not necessary for this recipe). Add the remaining ingredients to the blender. Measure 1/2 cup hemp milk and pour over ingredients. Blend again until smooth. Let stand 5 minutes to thicken.
Heat a nonstick pan over medium-high heat. Pour 1/4 C batter onto pan. Cook each side until golden brown. Makes approximately 7 small pancakes. (For me, this recipe serves one!)
Serve with toppings of your choice such as fruit, like fresh berries or bananas; a sweetener like maple syrup or silan; and peanut butter or tahini if you are hungry for a denser meal.
*If you don’t have access to hemp seeds use 1/2 C of plant milk of choice (such as this Homemade Cashew Milk) or even 1/2 C water.
