Hearty Cumin Lentil Stew | Plant-Based Vegan, Oil-Free, Easy and Healthy Recipe

INGREDIENTS

  • 2 C dry lentils

  • 1 C pre-cooked black beans

  • ½ Yellow onion, diced

  • 5 cloves garlic, minced

  • 2 medium potatoes, diced (approx 2 cups)

  • 1 large carrot, diced

  • 1 small tomato, diced

  • 2 C cauliflower florets

  • 3 T cumin

  • 2 T fresh thyme, stems removed minced

  • 1 T smoked paprika

  • ⅓ C tomato paste

  • 6 C water, or vegetable broth

  • Salt and black pepper to taste

METHOD

  1. Bring water or broth to a boil in a large pot.

  2. Add all ingredients except the black beans.

  3. Return to a boil.

  4. Cover and simmer for approximately 30 minutes or until potatoes are soft and lentils are thoroughly cooked.

  5. Add pre-cooked black beans. Mix well. Remove from heat.

  6. Serve warm. (Pairs great with brown rice.)
