Hearty Winter Stew
This delicious cumin forward one-pot stew is comforting, filling, and perfect for these colder, winter months.
2 C dry lentils
1 C pre-cooked black beans
½ Yellow onion, diced
5 cloves garlic, minced
2 medium potatoes, diced (approx 2 cups)
1 large carrot, diced
1 small tomato, diced
2 C cauliflower florets
3 T cumin
2 T fresh thyme, stems removed minced
1 T smoked paprika
⅓ C tomato paste
6 C water, or vegetable broth
Salt and black pepper to taste
Bring water or broth to a boil in a large pot.
Add all ingredients except the black beans.
Return to a boil.
Cover and simmer for approximately 30 minutes or until potatoes are soft and lentils are thoroughly cooked.
Add pre-cooked black beans. Mix well. Remove from heat.
Serve warm. (Pairs great with brown rice.)
