Oil-Free Granola

Plant-based, refined sugar free granola. You can change up which nuts and seeds you use; get creative.

Ingredients:

  • 2 C old fashioned rolled oats

  • ¼ C almonds, chopped

  • ¼ C yellow quinoa

  • 1 T shelled hemp seeds

  • Optional: Dried fruit, such as dried cranberries or raisins, to add in at the end.

  • 6 medjool dates, pitted and chopped

  • 1 tsp vanilla extract

  • 2 tsp cinnamon

  • ¾ C water

  • Pinch salt

Method:

  1. Preheat oven to 300 degrees Fahrenheit.

  2. In a high speed blender combine dates, vanilla extract, cinnamon, water, and salt. Blend until smooth.

  3. In a large mixing bowl, combine oats, almonds, walnuts, quinoa, and hemp seeds. Mix until evenly combined.

  4. Slowly fold in liquid mixture to the dry ingredients. Mix well until all ingredients are coated.

  5. Spread the ingredients on a nonstick baking sheet lined with parchment paper or a reusable non stick baking sheet cover. Press mixture into a thin, even layer. FYI: The thinner the layer, the crunchier the result.

  6. Bake for 20 minutes. Remove from oven. Break the layer into pieces and mix the granola. Bake for another 20-25 minutes. Option to add dried fruit when the granola has cooled.
