Chipotle Beans with Homemade Fries

Chipotle Beans Ingredients

  • 1/2 C small red onion, diced

  • 4 cloves garlic, minced

  • 2 C beans of choice (pictured: white beans & kidney beans)

  • 1/2 C yellow bell pepper, diced

  • 1 C tomatoes, diced

  • 1 C chopped kale, minced

  • 1 C mushrooms, diced

  • 1 T chipotle hot sauce

  • 1 T cumin

  • 1 T smoked paprika

  • 1 tsp garlic powder

  • salt and pepper to taste

Method

  1. Heat a few tablespoons of water over medium-high heat. Add onions and garlic. Cook for 3-5 minutes, stirring constantly until onions are translucent. Add bell pepper, smoked paprika, cumin, and garlic powder. Cook for another couple of minutes.

  2. Add tomatoes, mushrooms, and hot sauce. Cook on high for about 5 minutes. Reduce heat to medium-low. Cover and cook for approximately 10-15 minutes until the tomatoes reduce in size and slight lose their form.

  3. Add beans and kale. Mix well. Simmer
