Cherry Chocolate Ice Cream
This dairy free ice cream (or “nice cream”) recipe is antioxidant rich, plant-based, and very easy to make. All you need is a few ingredients and a blender. True to its name, this ice cream is bursting with the flavors of chocolate and cherry, while the dates sweeten it up and the blackberries add a little oomf.
This is my favorite plant-based ice cream recipe. It’s excellent as more of a milkshake/smoothie style too. Filled with healthy whole food ingredients, you can eat this in abundance to nourish your body while tasting the sweetest most flavorful treat.
4 medjool dates, pitted & chopped
2 T raw cacao powder
2 C frozen sweet cherries
1/2 C frozen blackberries
1 T tahini
1 T flax seeds
1/2 tsp vanilla extract
1/2 C water + a few tablespoons if needed (will depend on your blender) — If you are going for a smoothie or milkshake texture, add a bit more liquid.
Place dates in a small bowl with water, let soak for 5 minutes.
Blend all ingredients until smooth
