Fluffy Oatmeal Rye Pancakes
A pancake recipe for any morning, brunch, or breakfast for dinner. Super easy to make, this recipe makes a most flavorful stack. Delicious, decadent and made with rolled rye, rolled oats, and other wholesome ingredients, you won’t believe how healthy can taste so sweet.
1/2 C plant milk or water
2 ripe bananas
1/2 C rolled oats
1/4 C rolled rye oats (optional to use regular rolled oats)
1 tsp baking powder
1/4 tsp vanilla extract
1 tsp peanut butter (optional)
In a high-speed blender, add all of the ingredients. Blend again until smooth. Let stand 5 minutes to thicken. Add more liquid as needed.
Heat a nonstick pan over medium-high heat. Pour 1/4 C batter onto pan. Cook each side until golden brown. Makes approximately 7 small pancakes.
Toppings: banana, pomegranate, peanut butter, chia seeds, and maple syrups.
