Fluffy Oatmeal Rye Pancakes

A pancake recipe for any morning, brunch, or breakfast for dinner. Super easy to make, this recipe makes a most flavorful stack. Delicious, decadent and made with rolled rye, rolled oats, and other wholesome ingredients, you won’t believe how healthy can taste so sweet.

Fluffy Oatmeal Rye Plant-Based Pancakes

  • 1/2 C plant milk or water

  • 2 ripe bananas

  • 1/2 C rolled oats

  • 1/4 C rolled rye oats (optional to use regular rolled oats)

  • 1 tsp baking powder

  • 1/4 tsp vanilla extract

  • Pinch cinnamon

  • 1 tsp peanut butter (optional)


  1. In a high-speed blender, add all of the ingredients. Blend again until smooth. Let stand 5 minutes to thicken. Add more liquid as needed.

  2. Heat a nonstick pan over medium-high heat. Pour 1/4 C batter onto pan. Cook each side until golden brown. Makes approximately 7 small pancakes.

  3. Toppings: banana, pomegranate, peanut butter, chia seeds, and maple syrups.
